Og ingen Store Bededag uden hveder.  <br>Traditionen med at spise hvede p\u00e5 Store Bededag, kom da bagerne holdte lukket p\u00e5 Store Bededag. S\u00e5 dagen f\u00f8r bagte de hveder, som man kunne k\u00f8be. Og s\u00e5 p\u00e5 Store Bededag ristede man dem, og spiste dem som morgenbr\u00f8d.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I \u00e5r er f\u00f8rste gang jeg har pr\u00f8vet at kaste mig ud i at bage hveder af surdej. Og det fortryder jeg absolut ikke! Det er nok de bedste hveder jeg har smagt. <br>I det hele taget er surdej faktisk utrolig godt i s\u00f8de deje, da den fremh\u00e6ver smagene og giver en god syre (ikke at de er sure! Men de giver en god balance). Og s\u00e5 bliver de super bl\u00f8de og saftige.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"http:\/\/aslaugsbakery.dk\/wp-content\/uploads\/2020\/05\/surdejshveder-bid-1024x683.jpg\" alt=\"\" class=\"wp-image-1464\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Vil r\u00e5de dig til at bruge en r\u00f8remaskine til denne opskrift. Du kan ogs\u00e5 \u00e6lte i h\u00e5nden eller bruge en h\u00e5ndmixer med dejkroge. Men det skal \u00e6ltes godt og lidt l\u00e6nge.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity is-style-wide\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>Ingredienser:<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Fordej &#8211; s\u00f8d surdej<\/em>:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">80 g moden surdej<br>100 g hvedemel <br>60 g m\u00e6lk<br>20 g r\u00f8rsukker<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Hvededej:<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">250 g fordej &#8211; s\u00f8d surdej<br>300 g kold m\u00e6lk<br>45 g r\u00f8rsukker<br>10 g salt<br>5 g st\u00f8dt kardemomme <br>2 \u00e6g<br>500 g hvedemel<br>100 g sigtemel<br>75 g bl\u00f8dt sm\u00f8r<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>Fremgangsm\u00e5de:<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Dag 1:<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Bland ingredienserne til din s\u00f8de surdej. Husk at gemme en lille de af den originale surdej, s\u00e5 du har til n\u00e6stegang du skal bage.<\/li>\n\n\n\n<li>Lad den st\u00e5 lunt (ca. 26-28\u00b0C), og h\u00e6ve ca. 50% i st\u00f8rrelse. Tager mellem 2-4 timer. Er dit hus koldt, s\u00e5 s\u00e6t den evt. i ovnen med lyset t\u00e6ndt.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Bland kold m\u00e6lk, s\u00f8d surdej og sukker i en r\u00f8remaskine. <\/li>\n\n\n\n<li>Tils\u00e6t nu \u00e6g, salt, kardemomme, hvedemel og sigtemel. \u00c6lt det godt sammen i 5 minutter p\u00e5 lav\/medium hastighed. <\/li>\n\n\n\n<li>Mens den stadig \u00e6lter, tils\u00e6tter du nu sm\u00f8rret lidt af gangen. n\u00e5r alt sm\u00f8rret er i, lader du den \u00e6lte i 10 minutter til, ved lav\/medium hastighed. Dejen skal v\u00e6re glat og slippe sk\u00e5lens bund.<\/li>\n\n\n\n<li>Kom dejen i en ren b\u00f8tte (jeg bruger condib\u00f8tter, som jeg har f\u00e5et af en slikbutik) og l\u00e6g et t\u00e6tsluttende l\u00e5g p\u00e5. Lad nu dejen h\u00e6ve i 3-4 timer til de er h\u00e6vet ca. 30%. <br>Igen kan du evt lade den st\u00e5 i ovnen med lyset t\u00e6ndt. Bare hold \u00f8je med at den ikke bliver for varm. Temperaturen skal helst v\u00e6re et sted mellem 25-28\u00b0C<\/li>\n\n\n\n<li>Klarg\u00f8r en bageform som er ca. 20&#215;30 cm. Du kan enten sm\u00f8re den med lidt sm\u00f8r eller kl\u00e6de den medbagepapir.<\/li>\n\n\n\n<li>Tag dejen ud p\u00e5 et let meldrysset bord, og del dejen i 12 lige store dele.<\/li>\n\n\n\n<li>Form de 12 dele til boller, og placer dem i formen.<\/li>\n\n\n\n<li>D\u00e6k bollerne med plastikfilm eller en frysepose som er klippet op.<\/li>\n\n\n\n<li>Stil dem lunt i 3-4 timer, og lad dem h\u00e6ve ca. 40%. Ovnen skal st\u00e5 og varme helt op i minimum 45 minutter.<br>S\u00e6t en bageplade ind p\u00e5 ovnens nederste rille, som vi senere h\u00e6lder vand i til at skabe damp.<\/li>\n\n\n\n<li>Pensl bollerne med koldt vand<\/li>\n\n\n\n<li>Kog 1\/2 l vand, og h\u00e6ld det ned i den varme plade. S\u00e6nk ovntemperaturen til 225\u00b0C, og kom bollerne ind i midten af ovnen.<\/li>\n\n\n\n<li>Bag dem i 8 minutter med damp.<\/li>\n\n\n\n<li>Fjern pladen med vand, og bag bollerne 8-10 minutter mere, eller indtil de er blevet flot gyldne.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Kan enten spises som de er, lune og nybagte eller ristede. <br>Lad dem k\u00f8le helt af, sk\u00e6r dem over, og rist dem p\u00e5 en rist i ovnen ved 200\u00b0C almindelig oven i 7-10 minutter.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"http:\/\/aslaugsbakery.dk\/wp-content\/uploads\/2020\/05\/Surdejshveder-top-1024x683.jpg\" alt=\"\" class=\"wp-image-1462\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Velbekomme.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lyst til at vise mig dine kreationer?
